Ingredientes:
500 gr de carne picada de pollo o de ternera o bien mitad de ternera y mitad de cerdo.
1 hueso de jamón
2 huevos
6 dientes de ajo
Perejil
2 alcachofas (optativo)
2 cuchaardas soperas rasas de pan rallado
Un poco de vinagre de jerez
1 cucharadita de cúrcuma
2 l de agua
Unas hebras de azafrán
Pimienta molida
Aceite de oliva
Sal
Elaboración:
Estas albondigas se suelen hacer sin alcachofas, pero a mi me gusta ponerlas por el buen sabor que le da al caldo.
En una fuente de cristal, se pone un huevo, un poco de perejil picado, dos dientes de ajo picaditos, la cúrcuma, un poco de sal y pimienta y se bate muy bien, se añade la carne, se mueve todo bien y se reserva.
Se frien dos ajos y se ponen en el mortero junto con dos ajos crudos, un poco de perejil y sal, se machaca muy bien.
Se pone el agua en una olla con el hueso del jamón y el majado de ajo y perejil, cuando rompa a hervir se baja un poco el fuego y se deja tapado media hora para que se vaya haciendo el caldo.
Se sube el fuego de la olla donde se nos esta haciendo el caldo, le ponemos el azafrán y según vamos haciendo las albóndigas, las vamos incorporando.
Le ponemos a la carne el pan rallado y lo movemos muy bien. Ponemos un poco de vinagre en una tacita y mojamos primero la cuchara y luego cogemos porciones de carne, así no se nos pega la carne en la mano.
Cuando están todas, le añadimos las alcachofas partidas por la mitad, le habremos quitado algunas hojas y las puntas, dejamos que hierva todo 15 o 20 minutos.
A la hora de comerlas se coge solo la yema de un huevo, se deslie con un poco de vinagre y se le añade unas cucharaditas de caldo templado, esto se hace con cuidado para que no se nos cuaje la yema, despues se agrega a la olla.
Una taza de este caldo con una ramita de hierbabuena es algo delicioso.
