Lomo de cerdo al ajo con patatas

Ingredientes:

Un trozo de lomo de 1’250 kg

Una cabeza de ajos

3 hojas de laurel

Un buen manojo de perejil

1 vaso de vino blanco

Pimienta molida

Aceite de oliva

3 patatas

1 pimiento verde

1 cebolla

Elaboración:

Partimos el lomo en cuatro filetes y le ponemos un poco de sal y pimienta.

En un mortero machacamos dos dientes de ajo con el perejil y le añadimos el vino. El resto de dientes de ajo los dejamos enteros y les hacemos una raja a la mitad.

En la olla rápida, cubrimos la base con aceite de oliva de forma generosa, la ponemos al fuego y cuando el aceite este bien caliente, doramos los filetes por ambos lados. Una vez dorados le añadimos las hojas de laurel, los ajos y el contenido del mortero, ponemos un poco de sal.

Cuando comience a hervir fuerte tapamos la olla y lo dejamos a fuego mínimo durante 30 min (si es super rápida 20 min). Debe quedar en el aceite, si al abrir la olla quedase jugo, lo dejamos hervir unos min sin la tapadera.

Mientras se hace la carne, se pelan las patatas y se parten en laminas, se le añade el pimiento y la cebolla y se frie todo junto a fuego lento hasta que tome bonito color dorado.

Se sirve un filete de carne acompañado de patatas………..buensimo !!!!!
