Salsa de tomate (la pummarola)

Ingredientes:

1 k tomates rojos y grandes

1 cayena

1 rama hermosa de albahaca

Aceite de oliva

Azúcar

Sal

Elaboración:

La pummarola es una salsa tipica italiana, me gusto tanto, que yo la hago a mi manera.

Se lavan y se cortan los tomates en trozos. Se ponen en una cazuela con un buen chorreón de aceite de oliva, se mueve bien y se pone a fuego fuerte hasta que comience bien a hervir, se mueve de nuevo y se pone a fuego medio hasta que reduzca, que veamos que se consume bien el jugo.

Se aparta, se le añade un poco de sal, la punta de una cucharilla pequeña de azúcar (le quita acidez al tomate frito), la albahaca y la cayena y se deja tal cual hasta que se enfríe.

Una vez fria, se le quita la albahaca y la cayena y se pasa por el pasapures de agujero pequeño.

Y lista para añadir a cualquier tipo de pasta.
