Arroz con coquinas

Ingredientes:

½ k de coquinas
400 gr de arroz
1 pimiento rojo
1 pimiento verde
1 cebolla
1 limón
6 dientes de ajo
Perejil
Azafrán
Aceite de oliva
Sal
Agua (por cada medida de arroz, tres de agua)

Elaboración:

Ponemos las coquinas una o dos horas antes con un buen puñado de sal y cubiertas de agua fria, asi soltaran la arena si es que la tienen, las reservamos en el frigorífico.


Picamos las verduras y ponemos en una cazuela de base ancha un poco de aceite de oliva, de forma que cubra bien la base. Cuando tome temperatura hacemos el sofrito, ponemos primero los pimientos, dejamos rehogar unos minutos  y añadimos la cebolla, cuando todo este bien rehogado incorporamos el tomate bien picadito y rehogamos de nuevo bien todas las verduras.


En ese punto ponemos el arroz, le damos unas vueltas y añadimos el agua y el azafrán, dejamos hervir a fuego fuerte 5 min y en es punto bajamos a fuego medio 10 min. En total serán 20 min.


Mientras e va cociendo el arroz, hacemos las coquinas.
Escurrimos y lavamos las coquinas, ponemos un poco de aceite en una sartén y doramos los ajos hechos rodajitas, cuando empiecen a tomar color añadimos las coquinas y abundante perejil picado; las ponemos a fuego fuerte y le vamos dando vueltas hasta que estén todas abiertas.


Cuando el arroz lleve 15 min cociendo, añadimos las coquinas, ponemos unas gotas de limón y sal al gusto, dejamos 5 min más, apartamos y dejamos reposar 5 min.
