Migas de harina de trigo

Ingredientes (2 personas)

500 gr. de harina de trigo

2 vasos de agua

½ vaso de aceite de oliva

1 cabeza de ajos

2 pimientos verdes.

Sal

Elaboración:

La medida normal para hacer estas migas es un vaso de harina y otro de agua por comensal.

Se pelan los ajos y se trocean los pimientos al gusto (mejor trozos pequeños).

Se pone el aceite a calentar, se fríen los ajos y se reservan. A continuación se fríen los pimientos (se fríen al gusto, más o menos doraditos) y se reservan.

En este punto se baja a fuego mínimo el aceite, porque como está muy caliente y hay que poner el agua, para que no salpique mucho, se pone primero un poquito de harina y a continuación y de forma rápida, para que no se queme la harina, se coge una tapadera y se pone el agua rápidamente (la tapadera es para no quemarse, con una mano pones el agua y lo tapas rápido, es un instante, porque enseguida deja de salpicar), se sube el fuego y se pone la sal. Se deja que empiece a hervir y entonces se le pone toda la harina; se hace como una bola pastosa y dura, pero no importa; se baja el fuego y así, a fuego lento, se va dando golpecitos con el canto de una paleta, se va partiendo continuamente esa masa y así se va secando; poco a poco esa masa se irá haciendo bolitas, y en eso consiste, en ir secando la masa. Se acaba haciendo bolitas hasta que estén doraditas; cuando a la vista se ve que están, se prueban, se rectifican de sal en caso necesario y se les añaden los ajos. Al apartarlas se les ponen por encima los pimientos.

A estas migas hay quien les pone trocitos de panceta previamente fritos. También se suele tomar como acompañamiento: sardinas asadas, aceitunas o pescado frito.
